Sweet potatoes are various in sizes and colours. From pale white, golden brown and purple. In Thai cuisine, we use them to make desserts or put in curry or just eat it by steaming, plain and simple. Nowadays you will see heaps of recipes that contain sweet potato. As you already know, I like sweets, so let’s make one today.

• 2 medium size purple sweet potatoes

• 200g brown sugar

• 10g table salt

• 800ml limestone solutions

• A handful chopped spring onion
