Crispy Caramel Chips

Thai sweets are amazingly delicious! This is not an exaggeration at all because I am a living proof ( hahaha). No, seriously. You can have them from mild sweet to wild savoury, all kind of shapes, sizes and colours. This recipe is a mix of that and you my friends, today we are going to learn how to make something that you will love and enjoy.

Crispy Caramel Chips

For dough

  • 350g Plain flour

  • ¼ tsp Salt

  • 1 tbsp Raw sugar

  • ½ tbsp White pepper powder

  • ½ tbsp Cinnamon powder

  • 2 tbsp Limestone solutions

  • 2 tbsp Water

  • 2 Egg yolks

For caramel coating

  • ¼ cup palm sugar

  • ¼ cup raw sugar

  • 1 tbsp fish sauce

  • ¼ cup water

  • 4 coriander roots

  • 10 small garlic cloves

  • 1 tbsp white pepper seed

How to make

  • n a large mixing bowl, combine the flour, salt, raw sugar, white pepper powder, and cinnamon powder. Mix well.

  • In a separate small bowl, mix together the limestone solutions and water.

  • Add the egg yolks to the flour mixture and mix well. Gradually add the limestone solution mixture and continue to mix until a smooth dough forms.

  • Knead the dough for about 5 minutes, or until it becomes elastic.

  • Divide the dough into small portions, and roll each portion out into a thin sheet.

  • Cut the dough into small, rectangular chips.

  • In a deep fryer or large pot, heat the oil to 350°F (175°C).

  • Carefully add the chips to the hot oil and deep fry for about 2-3 minutes, or until golden brown and crispy.

  • Remove the chips from the oil and place them on a paper towel-lined plate to remove excess oil.

  • For the caramel, in a small saucepan, combine the sugar and water. Cook over medium-high heat, stirring constantly until the sugar has dissolved.

  • Once dissolved, decrease the heat to medium-low and let the mixture simmer for about 5-7 minutes, or until it has turned a golden brown color.

  • Remove the caramel from the heat and carefully pour it over the crispy chips, making sure that each chip is evenly coated.

  • Let the caramel chips cool and harden for a few minutes before serving. Enjoy your delicious and crispy caramel chips!
