Crispy Pork Belly

I have been putting off making crispy pork belly for a while now because I’d rather go to the weekend market than buy from one of my favourite local vendors. But now we are still in restriction, desperation comes to play and I must find a way to make this delicious juicy fatty crunchy pork belly. I also need to figure out how to make it with my brand-new air-fryer. Adventure has just begun!

Ingredients

  • 1 whole piece of pork belly

  • ½ tsp ground white pepper

  • 1 tbsp thin soy sauce

  • ½ cup salt or more if needed

For dipping sauce

  • 10 birdeye’s chilli

  • 4 garlic cloves

  • 1 tbsp fish sauce

  • 2 tbsp hot water

  • 1 tsp palm sugar

  • 2 coriander roots

  • 1 fresh lime

How to make

  • Rub the pork belly with ground white pepper and thin soy sauce. Make sure to evenly coat all sides of the pork belly.

  • Cover the pork belly with salt and place it in the refrigerator for at least 4 hours or overnight.

  • Rinse off the salt from the pork belly and pat dry with paper towels.

  • Preheat your air fryer to 180 degrees C.

  • Place the pork belly pieces in the air fryer and cook for 20-25 minutes or until the pork is crispy and golden brown.

  • While the pork is cooking, make the dipping sauce by blending together the chilli, garlic, fish sauce, hot water, palm sugar, coriander roots and lime juice.

  • Once the pork is cooked, remove it from the air fryer and let it rest for a few minutes before cutting it into bite-size pieces.

  • Serve the pork belly with the dipping sauce and enjoy.
