Homemade Crispy Crepe
Nothing pleased me more than strolling streets looking for new food to try. It is easy to do if you are living in a country like Thailand. Since I no longer live there, I might as well recreate the recipe. So, this savoury snack is really easy to make once you nail the basic ingredients. The challenge part is to make it as thin as possible without burning. So, Crispy, sweet, salty and golden brown is what we are looking for. I make a short list of all required ingredients below. Ingredients for crepe
150g rice flour
80g palm sugar
120ml limestone water
2 egg yolks
A pinch of salt
Filling
100g palm sugar
2 egg white (from above)
Crush pistachio
Raisins or sultanas
What I’ve learned from making this recipe is that using palm sugar instead of icing sugar makes meringue tastes better.
