Daifuku Rice Cake
I like Japanese sweets, they are so pleasing to the eyes and very delicate. Today I will brave myself to take a little bite of their recipe and then add my own style to it. No pressure!
Ingredients:
1 cup glutinous rice flour
⅓ cup white rice flour
4 tbsp brown sugar
¼ tsp salt
1 tbsp red syrup
250 ml water
1 cup red bean
300 ml coconut milk
How to make
In a large bowl, mix together glutinous rice flour, white rice flour, brown sugar, and salt.
In a saucepan, bring water and red syrup to a boil. Pour this mixture into the dry ingredients and stir until well combined.
Gradually add the coconut milk and stir until the mixture becomes a sticky dough.
Divide the dough into equal portions and shape each into a ball.
Flatten each ball into a disc and place a spoonful of red bean in the center of each disc.
Pinch the edges of the dough around the filling, sealing it inside and forming a ball again.
Place the balls on a tray lined with wax paper and let it cool for 30 minutes.
