Spicy Chicken Wings
When I was living in Thailand. I love to visit my favourite food stall on the roadside where they make great juicy grilled chicken wings. The smell of herbs that coated all over those wings and fat that drips into the fire just creates a magic scent. Fresh grilled chicken wings coupled with warm sticky rice are heavenly made.
Ingredients:
10 chicken wings or 1 kg of chicken wings
2 tsp coriander seed
4 stalks lemongrass
10 cloves of garlic
2 tbsp sweet soy sauce
2 tbsp oyster sauce
2 tbsp mushroom soy sauce
1 tbsp palm sugar
2 tsp grounded chilli
How to make
In a blender, grind the coriander seed, lemon grass, garlic, sweet soy sauce, oyster sauce, mushroom soy sauce, palm sugar, and ground chilli to make a paste.
Rub the paste all over the chicken wings, making sure they are well coated.
Marinate the chicken wings in the fridge for at least 2 hours.
Preheat the oven to 200°C (400°F). Line a baking tray with parchment paper.
Place the chicken wings on the prepared baking tray and bake for 25 to 30 minutes or until the chicken wings are cooked through and the skin is crispy and golden brown.
Serve the spicy grilled chicken wings with warm sticky rice.
