Papaya Sour Curry

Today’s recipe is one of my favourites ‘Papaya Sour Curry’. I had this a lot when my grandmother was able to cook. Ever since I moved overseas, I always have this craving in the back of my mind. Well, luck is on my side. A friend of mine offers homegrown papaya from his backyard. I will surely make a good use of it. 

Ingredients

  • 1 raw papaya

  • 6 garlic cloves

  • 1 bulb red onion

  • 8 dried chill

  • 1 kaffir lime fruit

  • 4 krachai (finger root)

  • 1 chunk turmeric

  • 4 dried smoked fish (or use any fish, or prawns)

  • 3 tbsp fish sauce

  • ½ cup tamarind paste

  • 1 tbsp chicken stock powder

  • 600 ml water

  • How to make

    Peel the green skin of the papaya and slice it into pieces. Take 2 fish and blend them into a floss consistency, and break the remaining fish into small chunks. Set them aside.

  • To make the curry paste, Peel kaffir lime fruit skin, use only half of it. Peel the garlic cloves, then add kaffir lime zest, krachai, dried chilli, and red onion into a blender. Add half a cup of water to ease blending.

  • In a medium-sized pot, add the curry paste and turn the heat up to high. Add more water and bring it to a simmer.

  • Once simmering, add the fish floss and chunks and sliced papaya. Add seasonings and close the lid. Once it starts boiling, remove the lid, and remove any froth. Once cooked, papaya should look a bit clearer and soft. Remove from heat and serve hot. This unique and delicious dish is sure to impress your family and friends. Enjoy!
