Southern Thai Dried Curry

Hello there and welcome to Jolly Kitchen Thai cooking channel. My name is Kiet and this week’s episode I will show you how southern Thai dried curry is made. Let’s go.

Southern Dried Curry

  • 500g minced pork

  • 2tbsp red chilli paste

  • 3 kaffir lime leaves

  • 1-2 stalks lemongrass

  • 2 tbsp fish sauce

  • 1 tsp shrimp paste

  • A pinch of sugar

  • 1-2 fresh chilli for garnish

Ingredients for chilli paste

  • 6 dried chilli

  • 4 bird’s eye fresh chilli

  • 4 garlic cloves

  • 1 small red shallot

  • 1 kaffir lime fruit (zest only)

  • 2 tsp white pepper

  • 2 small fresh turmeric

How to make

  • Prepare the chilli paste by mixing together dried chilli, fresh chilli, kaffir lime fruit zest, green pepper, white pepper, fresh turmeric, garlic, and red onion. Pound the ingredients in a mortar and pestle or blend until smooth.

  • In a non-stick saucepan on medium to high heat, add minced pork and cook until 80% done.

  • Add the chilli paste to the pork and mix until well combined. Be cautious, this dish is quite spicy.

  • Season the curry with fish sauce and additional shrimp paste for added fragrance. Add a pinch of sugar to balance the flavour.

  • Add green pepper and cook until the curry thickens.

  • Turn off the heat and add kaffir lime leaves and lemongrass for added fragrance.

  • Serve with steamed jasmine rice and accompaniments of seasonal vegetables such as cucumber, sugar loaf, and Thai eggplant.
