Red Lotus Curry
Every time when I see red lotus it reminds me of simpler childhood I had. Back in the day when I grew up in the upcountry where most things you can find in the wild can turn into delicious meals. Yes, they are directly produced by the nature that we can harvest. No chemical, no pesticide or any harmful agents. Red lotus can be found in any large body of fresh water such as ponds or lakes. Today I will show you how to turn this beautiful flower into a delicious curry.
Ingredients
2 bunches red lotus stem
1 whole smoked trout
40g red curry paste (add less if you don’t like spicy)
30g palm sugar
50ml fish sauce
40g tamarind paste
4 kaffir lime leaves
400ml coconut milk
