Spicy Rice Balls

I have always enjoy Thai street food. In my recent trip back to visit Thailand, I had a chance to taste one of my favourite dishes; spicy rice balls. A combination of seasoned crispy rice mixed with crunchy fried peanut. Cut the taste with a dash of fresh lime juice and mouth burner fresh fried chilli. This is something to dye for. Well, today I will recreate that recipe and share with all of you. Here we go. 

Ingredients

  • 2 cup steamed rice

  • 1 ½ tsp chicken stock powder

  • 1 ½ tsp chilli powder

  • 1 tbsp minced fresh garlic

  • 1 fresh lime

  • 2 tsp fish sauce

  • 2 cups cooking oil

  • ¼ cup raw peanut

  • 8 dried chilli

  • 2 shallots

  • 3 baby lettuces

How to make

  • Take 2 cups of steamed rice and break it down into small pieces.

  • In a mixing bowl, combine the rice with 1 tsp of chicken stock powder, 1 tsp of chilli powder, 1 tbsp of minced fresh garlic, the juice of 1 fresh lime, and 2 tsp of fish sauce. Mix until well combined.

  • Take small portions of the rice mixture and shape them into balls.

  • In a pan, heat 2 cups of cooking oil to high heat.

  • Once the oil is hot, add the rice balls to the pan and deep fry them until they are golden brown.

  • Remove the rice balls from the pan and place them on a plate lined with paper towels to remove excess oil.

  • In the same pan, add ¼ cup of raw peanuts and 8 dried chillies. Fry until the peanuts are golden brown and the chillies are crispy.

  • To serve, break down rice balls, mix with peanut, chillies, lime juice, fish sauce and fresh vegetables on side. Serve immediately and enjoy!
