Summer Butterfly Pea Water

My grandmother has taught me not to play with food, meaning wrist slaps when she saw me doing it but that has not stopped me from doing so. This recipe is like a mini-science project. Watch the magic happens when you drop lime juice in to blue water. Amazing!

Ingredients:

  • Butterfly pea    ⅓ cup

  • Sugar   ½ cup

  • Honey   2 tbsp

  • Lime  1 whole

  • Water  500 ml

How to make

  • Start by washing the butterfly pea and placing it in a pot.

  • Add 500 ml of water to the pot and let it boil on medium heat for 5-7 minutes.

  • After the butterfly pea has boiled, turn off the heat and strain the water into a jug or pitcher.

  • In a separate bowl, mix together the sugar and 2 tablespoons of honey until it dissolves completely.

  • Add the sugar and honey mixture to the butterfly pea water and stir well.

  • Squeeze in the juice from 1 whole lime and stir the mixture.

  • Let the mixture cool in the fridge for at least 30 minutes.

  • Serve the butterfly pea water over ice and enjoy the magic of the blue water turning pink from the lime juice.
