Grilled Chicken Salad

I love making spicy salads! They are so good and stimulate your taste buds. This is going to turn your ordinary mundane salad into something whole awesome lot.

Ingredients:

  • Chicken Thigh fillet skin on 3 pieces

  • Fresh mint 10 leaves

  • Spring onion 1 tbsp

  • Toasted rice 1 tbsp

  • Fish sauce 1 tbsp

  • Lime juice 1 tbsp

  • Shallot ¼ cup

  • Chilli flake 1 tsp

How to make

  1. Start by marinating the chicken fillets in a mixture of fish sauce and lime juice for 30 minutes.

  2. Preheat your grill to medium-high heat.

  3. Once heated, place the chicken fillets onto the grill, skin side down and cook for 4-5 minutes on each side or until fully cooked.

  4. Remove the chicken from the grill and let it rest for a few minutes.

  5. Meanwhile, in a large mixing bowl, combine the chopped mint, chopped spring onion, toasted rice, and chopped shallots.

  6. Cut the chicken fillets into thin strips and add it to the bowl with the salad ingredients.

  7. Drizzle the remaining marinade over the salad ingredients.

  8. Sprinkle with chilli flakes and gently toss everything together to combine.

  9. Serve and enjoy your delicious Grilled Chicken Salad!

Note: Feel free to adjust the amount of chilli flakes to your desired level of spiciness. As always, all of my recipes are loosely based on my personal taste, so you are free to create your own flavour that suits you.
