Thai Seafood Salad

I have a mini game for you. Name one of the most popular Thai salads in five seconds, Go! If your answer is anything else but the one and only papaya salad. You have not yet seen Thailand. Just kidding. This week I will show you a mouth-watering, tear jerker and hell fire salad that so hot it could burn the house down. That’s right, the menu today will include seafood and fresh herbs. For those dare-devil I invite you to create this dish and give me your best version. Here is the list of ingredients.

For dressing

  • 2 tbsp fish sauce

  • 2 tbsp syrup

  • 2 ½ tbsp lime juice

  • 5-6 birdseye's fresh chilli

For salad

  • 2-3 baby octopus

  • 4 large raw prawns

  • 1 small pack glass noodle

  • 1 small red onion

  • 1 small onion

  • 1 stalk celery with leave

  • 1 tomato

  • 1 egg

  • 2 tbsp cashew nut

How to make

  • Start by preparing the dressing. In a small mixing bowl, add 2 tbsp fish sauce, 2 tbsp syrup, 2 ½ tbsp lime juice, and 5-6 birdseye's fresh chilli (seeds removed). Mix well and set aside.

  • Next, prepare the seafood by cleaning and deveining 2-3 baby octopus and 4 large raw prawns. Leave the tail on for the prawns.

  • Boil a pot of water and cook the octopus and prawns for about 3-4 minutes or until cooked through. Remove from heat and set aside to cool. Once cooled, cut the octopus and prawns into bite-size pieces.

  • In the same pot, add 1 small pack of glass noodle and cook according to package instructions. Once cooked, drain and set aside to cool.

  • To assemble the salad, finely slice 1 small red onion, 1 small onion, 1 stalk of celery with leaves, 1 tomato, and 2 tbsp of cashew nuts.

  • Soft-boil 1 egg by placing it in a small pot of boiling water for about 4-5 minutes. Once done, remove from heat, cool and peel the egg. Cut it into wedges.

  • In a mixing bowl, add the cooked and cooled seafood, glass noodle, sliced vegetables, and cashew nuts. Pour the prepared dressing over the top and toss well to combine.

  • To serve, place the salad in a serving bowl and top with wedges of the soft-boiled egg. Enjoy your spicy and flavorful seafood salad!
