Hot Seafood Salad

We had a long break from our cooking and went on a two weeks road trip to the outback in Australia. During the trip we had stock up so much food for the pantry thinking that we would have time to enjoy our outdoor cooking. Well, that didn’t go so well. Flies and heat had put cooking in the back seat and we resorted to ready a quick eat meal. Once I returned home, I craved some hot food. It’s a good day that I will make and share with you so we all can enjoy a mouth-burning sensation.

Ingredients

  • 5-6 small squids

  • 4 garlic cloves

  • 6 fresh chilli

  • 1 bulb red onion

  • 2 stalk of celery with leaves

  • 3 tbsp fresh lime juice

  • 1 tbsp syrup

  • 2 tbsp fish sauce

  • 1 whole coriander

  • 10 mint leaves

How to make

  • Start by cutting the squid into small rings and removing the spine. Soak the squid in a mixture of water and corn flour, this will make the squid juicier.

  • Crush some garlic and chilli and finely chop them. Pick some herbs and set them aside.

  • To make the dressing, in a mixing bowl add the chopped garlic and chilli, add fish sauce, syrup, and lime juice. The taste should be sour first, then sweet, and salty. These three should be balanced. Set the dressing aside.

  • Prepare to cook the squid by heating up a saucepan, adding water and waiting until it's boiling. Scald the squid in boiling water for 2 minutes (don’t overcook them). Then scoop them out and transfer them to a salad bowl.

  • Mix the squid and salad dressing, then add the herbs. Place the salad on a plate and serve it right away. This salad is perfect for a light and refreshing meal or as a side dish. Enjoy!
