Stir-fried Pumpkin and Egg

Ingredients
250g pumpkin
4 eggs
5 garlic cloves
50 sweet radish
1 tbsp raw sugar
1 tbsp fish sauce
How to make
Start by selecting a mature pumpkin. Peel off 80-90% of the skin, leaving some for color. Cut and slice into small pieces, removing the seeds with a spoon. Cut the pumpkin into small dice.
Prepare the fresh spring onion, garlic, and sweet radish.
Heat a saucepan over medium heat, add 1 tablespoon of cooking oil. Once the oil is warm, add the chopped garlic and cook until fragrant.
Crack the eggs into the pan and scramble them. Add the diced pumpkin and gently stir. Add a little bit of water to help steam the pumpkin. Cover the pan with a lid and let it cook for 10-15 minutes.
Once the pumpkin is softened and the water has dried up, add sweet radish. Season with raw sugar and fish sauce. Keep cooking for another 5 minutes and add the spring onion last before turning off the heat.
Serve warm with steamed rice or enjoy as is. Enjoy your delicious stir-fried egg pumpkin dish!
