Stir-fried Pumpkin and Egg

Hi there, welcome to Jolly Kitchen my name is Kiet. In today’s episode I will show you how to make a simple flexitarian food that minimises your carbon footprint on food and is super delicious. Let’s see how it makes. 

Ingredients

  • 250g pumpkin

  • 4 eggs

  • 5 garlic cloves

  • 50 sweet radish

  • 1 tbsp raw sugar

  • 1 tbsp fish sauce

How to make

  • Start by selecting a mature pumpkin. Peel off 80-90% of the skin, leaving some for color. Cut and slice into small pieces, removing the seeds with a spoon. Cut the pumpkin into small dice.

  • Prepare the fresh spring onion, garlic, and sweet radish.

  • Heat a saucepan over medium heat, add 1 tablespoon of cooking oil. Once the oil is warm, add the chopped garlic and cook until fragrant.

  • Crack the eggs into the pan and scramble them. Add the diced pumpkin and gently stir. Add a little bit of water to help steam the pumpkin. Cover the pan with a lid and let it cook for 10-15 minutes.

  • Once the pumpkin is softened and the water has dried up, add sweet radish. Season with raw sugar and fish sauce. Keep cooking for another 5 minutes and add the spring onion last before turning off the heat.

  • Serve warm with steamed rice or enjoy as is. Enjoy your delicious stir-fried egg pumpkin dish!
