Barramundi with Green Mango Salad

Ingredients
1 whole Barramundi scaled
2 tbsp flour (for coating)
1 tbsp fish sauce
For green mango salad
1 green mango
2 shallots
1 spring onion
1 ½ tbsp lime juice
2 fresh chilli
1 whole coriander
1 stalk lemongrass
1/2 tbsp palm sugar
1 ½ tbsp fish sauce
How to make
Start by preparing the green mango salad by shredding the green mango, shallots, spring onion, and coriander.
In a separate bowl, mix together the lime juice, chilli, lemongrass, palm sugar, and fish sauce.
Next, season the fish with fish sauce, and coat it in flour.
Heat up oil in a pan and fry the fish until it turns golden brown.
To serve, place the fish on a plate and top it with the green mango salad.
Finally, drizzle a sweet-salty fish sauce over the top of the fish. Enjoy!
