Ingredients

  • 1 whole Barramundi scaled

  • 2 tbsp flour (for coating)

  • 1 tbsp fish sauce

For green mango salad

  • 1 green mango

  • 2 shallots

  • 1 spring onion

  • 1 ½ tbsp lime juice

  • 2 fresh chilli

  • 1 whole coriander

  • 1 stalk lemongrass

  • 1/2 tbsp palm sugar

  • 1 ½ tbsp fish sauce

How to make

  • Start by preparing the green mango salad by shredding the green mango, shallots, spring onion, and coriander.

  • In a separate bowl, mix together the lime juice, chilli, lemongrass, palm sugar, and fish sauce.

  • Next, season the fish with fish sauce, and coat it in flour.

  • Heat up oil in a pan and fry the fish until it turns golden brown.

  • To serve, place the fish on a plate and top it with the green mango salad.

  • Finally, drizzle a sweet-salty fish sauce over the top of the fish. Enjoy!
