Grandma Coconut Pumpkin
It is always up to debate whether pumpkin is a fruit or vegetable. In Thai cuisine we use pumpkin tip or soft vine and young pumpkin as vegetable. A mature pumpkin can be found in various desserts. Today you will learn how to make a basic Thai dessert that use pumpkin as main ingredient.
Ingredients
400 g mature pumpkin
350 ml coconut cream
400 ml limestone solutions (for soaking)
40 g caster sugar
40 g palm sugar
1 tsp table salt
200 ml water
Coconut topping
200 ml coconut cream
1 tsp rice flour
1 tsp arrowroot flour
1 tsp table salt
50 ml water
How to make
Peel and cut the pumpkin into small cubes.
Soak the pumpkin in limestone solution for 30 minutes to prevent them from becoming mushy when cooking.
In a pot, combine the coconut cream, caster sugar, palm sugar, salt, and water. Bring to a boil.
Add the soaked pumpkin to the pot and let simmer for 20-25 minutes or until the pumpkin is tender.
To make the coconut topping, in a separate pot, combine the coconut cream, rice flour, arrowroot flour, salt, and water. Bring to a simmer and stir until the mixture thickens.
Serve the pumpkin in bowls and top with the coconut topping. Enjoy!
