Grandma Coconut Pumpkin

It is always up to debate whether pumpkin is a fruit or vegetable. In Thai cuisine we use pumpkin tip or soft vine and young pumpkin as vegetable. A mature pumpkin can be found in various desserts. Today you will learn how to make a basic Thai dessert that use pumpkin as main ingredient.

Ingredients

  • 400 g mature pumpkin

  • 350 ml coconut cream

  • 400 ml limestone solutions (for soaking)

  • 40 g caster sugar

  • 40 g palm sugar

  • 1 tsp table salt

  • 200 ml water

Coconut topping

  • 200 ml coconut cream

  • 1 tsp rice flour

  • 1 tsp arrowroot flour

  • 1 tsp table salt

  • 50 ml water

How to make

  • Peel and cut the pumpkin into small cubes.

  • Soak the pumpkin in limestone solution for 30 minutes to prevent them from becoming mushy when cooking.

  • In a pot, combine the coconut cream, caster sugar, palm sugar, salt, and water. Bring to a boil.

  • Add the soaked pumpkin to the pot and let simmer for 20-25 minutes or until the pumpkin is tender.

  • To make the coconut topping, in a separate pot, combine the coconut cream, rice flour, arrowroot flour, salt, and water. Bring to a simmer and stir until the mixture thickens.

  • Serve the pumpkin in bowls and top with the coconut topping. Enjoy!
