Crispy Herbal Wings

When we are talking about the king of side dishes, Thai people can get very creative and manipulate their food. The menu today is a kind of side dish that serve side by side with other mains also widely popular with alcoholic drinks. A crispy sound of wings when biting combined with a tender sweet tone and crush with fried nut and burn your moth with fried chillies. No, this is the work of the devil. 

Crispy Herbal Wings

  • 15 mid wings (cut into half)

  • 2 tbsp fish sauce

  • 2 tbsp deep-fry flour

  • ¼ cup raw peanut

  • Cooking oil

  • Some kaffir lime leaves, dried chillies

How to make

  • In a mixing bowl, combine the fish sauce and deep-fry flour. Mix well.

  • Add the wings to the mixture and toss to coat the wings evenly.

  • In a separate pan, heat the cooking oil over medium-high heat.

  • Once the oil is hot, add the coated wings to the pan and fry them until they are golden brown and crispy.

  • While the wings are frying, in a separate pan, toast the raw peanuts over low heat until they are golden brown.

  • Once the wings are done, remove them from the oil and place them on a paper towel to remove any excess oil.

  • In the same pan, add kaffir lime leaves and dried chillies, and fry until fragrant.

  • Place the fried wings in a serving dish, and top with the fried peanuts, kaffir lime leaves and dried chillies.

  • Serve and enjoy with your favourite dipping sauce.
