Pumpkin and Coconut Slice

As a hardcore sweet tooth, I cave in so easily when it comes to anything Thai sweets. One of my favourites is coconut and pumpkin. So, let’s waste no more time and start cooking.

Ingredients

  • 350g steamed pumpkin

  • 200g rice flour (not glutinous type)

  • 100g tapioca flour

  • 50g arrowroot flour

  • 150g sugar

  • 2 tsp salt

  • 400ml coconut milk

How to make

  • Preheat the oven to 180C.

  • In a mixing bowl, combine rice flour, tapioca flour, arrowroot flour, sugar and salt.

  • Gradually add the coconut milk and stir until well combined.

  • Add the steamed pumpkin and mix well.

  • Pour the mixture into a baking dish and bake in the oven for 30-40 minutes or until the mixture is solidified.

  • Once it's done, let it cool before slicing and serving.
