Pumpkin and Coconut Slice
As a hardcore sweet tooth, I cave in so easily when it comes to anything Thai sweets. One of my favourites is coconut and pumpkin. So, let’s waste no more time and start cooking.
Ingredients
350g steamed pumpkin
200g rice flour (not glutinous type)
100g tapioca flour
50g arrowroot flour
150g sugar
2 tsp salt
400ml coconut milk
How to make
Preheat the oven to 180C.
In a mixing bowl, combine rice flour, tapioca flour, arrowroot flour, sugar and salt.
Gradually add the coconut milk and stir until well combined.
Add the steamed pumpkin and mix well.
Pour the mixture into a baking dish and bake in the oven for 30-40 minutes or until the mixture is solidified.
Once it's done, let it cool before slicing and serving.
