Chicken Cashew Nut

There are many Thai dishes that have been passing down from generations that influenced by other cuisine. After many alterations the line is blur then we can no longer trace back to the original of its root. Today’s recipe is very popular in modern as modern Thai food which strongly influenced by Chinese. But as may already know that Thai people enjoy all kind of food and this one has become one of our staple. This recipe is super easy to make and requires minimal ingredients.

Ingredients

  • 2 pieces chicken breast

  • 100g cashew nut

  • 3 large dried chilli

  • 2 large fresh chilli

  • 2 stalks spring onion

  • 6 garlic cloves

  • 1 ½ tbsp oyster sauce

  • ½  tbsp mushroom sauce

  • 1 tbsp sugar

  • 1 tbsp fish sauce

  • 1 tbsp water

  • Cooking oil for deep fry

How to make

  • Dice the chicken breast into small pieces and coat them with flour.

  • Deep fry the chicken pieces until golden brown, then set them aside.

  • Heat up a wok and add cooking oil.

  • Char crush garlic to fragrance, and add to the wok.

  • Add the fried chicken, cashew nuts, and spring onion to the wok.

  • Add a dash of water and stir fry the ingredients together.

  • Season with oyster sauce, sugar, and fish sauce.

  • Serve hot with steamed rice.
