Vegan Coconut Cookie
Look, cookies are not a typical or traditional Thai dessert but it has been so widely adopted into our pantry. With more ingredients available at convenience, making cookies is so easy. It has been a long time since I had a bite of cookies. Today, I will dive into making my own recipe, keeping some traditions and adding something new to it. Let’s go!
Ingredients
150 g all-purpose flour
150 g oatmeal
200 g solidified coconut oil
120 g brown sugar
100 g desiccated coconut
4 tsp pumpkin seed
½ tsp baking soda
½ tsp salt
2 eggs
How to make
In a mixing bowl, crack the eggs and add the sugar, salt, and baking soda. Beat until well combined.
Stir in the solidified coconut oil until well combined.
Gradually add the flour, desiccated coconut, and pumpkin seed, mixing until a dough forms.
Use a small spoon to portion the dough and roll into bite-size balls. Keep in mind that the size of the cookies will affect baking time.
Line the cookie dough on a baking tray, spacing them evenly.
Bake the cookies for 15-18 minutes at 160C with top-bottom heat. The cookies are done when they are brown and cooked through.
Remove from the oven and transfer to a cooling rack.
Store the cookies in an airtight container to extend their freshness.
