Grass Jelly Soy Caramel

If you are not aware, Thailand is a tropical country which means that the weather is pretty hot and even hotter in the summer. Unlike the weather, we are seeking ways to keep ourselves cool, calm and full of food. It is undeniable that most Thai people have a sweet tooth. Not just food but also drinks. A cup of grass jelly with soy milk and flavoured caramel palm sugar will keep your thirst at bay. So...let’s jump right into the action.

Ingredients

  • 50 g grass jelly powder

  • 1.20 lt water

  • 1 lt soy milk

  • 160 g brown sugar

  • 60 g dark brown sugar

  • 1 tsp salt

  • 30 ml amyl acetate flavour

How to make

  • In a pot, add water and grass jelly powder. Stir it up until the powder is dissolved. Turn on the heat to medium and keep stirring until the jelly solidifies. This process should take around 10-15 minutes, so be patient!

  • Pour the jelly into a baking tray and let it cool down. This is the perfect time to prepare the caramel syrup.

  • In a separate pot, add brown sugar, dark brown sugar, and water. Bring it to a boil, and stir constantly. Keep an eye on the syrup, it should slowly drip but not too thicken.

  • While the syrup is still warm, add salt and amyl acetate flavor. Give it a stir, and let it cool down.

  • The moment of truth! Cut the jelly into bite-size pieces. Add soy milk, syrup and crushed ice to a bowl or a glass. Serve it chilled and enjoy!
