Homemade Pumpkin Bread

This recipe is something I came up with while trying to clean my pantry. I forgot the pumpkin that I bought last week and I have no idea what I should do with it. Fortunately, I have some ingredients left from my previous banana bread baking session which is not posted on my Youtube channel. So, in this week's episode, I will give a rough guide on how to make somewhat simple and delicious homemade-style pumpkin bread. Let’s have a look at the ingredients!

Ingredients

  • ½ cup pumpkin puree

  • 160 g all-purpose flour

  • 100 g sugar

  • 2 eggs

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1 tbsp coconut oil (optional)

How to make

  • Preheat your oven to 180C and grease a loaf tin.

  • In a mixing bowl, combine the pumpkin puree, sugar and eggs. Mix until well combined.

  • In a separate bowl, sift together the flour, baking soda, and baking powder.

  • Slowly add the dry ingredients to the pumpkin mixture, stirring until just combined. If you like, you can add 1 tablespoon of coconut oil to the mixture for added moisture.

  • Pour the batter into the prepared loaf tin and smooth the top.

  • Bake in the preheated oven for 40-45 minutes or until a skewer inserted into the center of the loaf comes out clean.

  • Once cooked, remove from the oven and let it cool for 10 minutes.

  • Once cooled, remove from the tin and transfer to a wire rack to cool completely.

  • Slice and serve, enjoy as it is or toasted with a slather of butter.

  • Note: You can add some chopped nuts, or dried fruits for added texture and flavor.
