Homemade Pumpkin Bread
This recipe is something I came up with while trying to clean my pantry. I forgot the pumpkin that I bought last week and I have no idea what I should do with it. Fortunately, I have some ingredients left from my previous banana bread baking session which is not posted on my Youtube channel. So, in this week's episode, I will give a rough guide on how to make somewhat simple and delicious homemade-style pumpkin bread. Let’s have a look at the ingredients!
Ingredients
½ cup pumpkin puree
160 g all-purpose flour
100 g sugar
2 eggs
1 tsp baking soda
1 tsp baking powder
1 tbsp coconut oil (optional)
How to make
Preheat your oven to 180C and grease a loaf tin.
In a mixing bowl, combine the pumpkin puree, sugar and eggs. Mix until well combined.
In a separate bowl, sift together the flour, baking soda, and baking powder.
Slowly add the dry ingredients to the pumpkin mixture, stirring until just combined. If you like, you can add 1 tablespoon of coconut oil to the mixture for added moisture.
Pour the batter into the prepared loaf tin and smooth the top.
Bake in the preheated oven for 40-45 minutes or until a skewer inserted into the center of the loaf comes out clean.
Once cooked, remove from the oven and let it cool for 10 minutes.
Once cooled, remove from the tin and transfer to a wire rack to cool completely.
Slice and serve, enjoy as it is or toasted with a slather of butter.
Note: You can add some chopped nuts, or dried fruits for added texture and flavor.
